SEEDS OF GOODNESS

Chia seeds have become very popular and are praised for their nutritional value. They are a great source of important minerals like calcium and magnesium. Chia seeds contain good fats, like polyunsaturated omega-3 fatty acids. They are a source of protein and of course, fibre. About 25 g of seeds can provide close to 9 g of fibre! Chia seeds also have a very useful gelling property, absorbing liquid (and flavour) to form a gel or pudding consistency.

CHIA SEED PUDDING WITH DAIKON RADISH SEEDS

Serves 2

Ingredients

30 ml (2 tsp) chia seeds

125 ml (½ cup) plain yoghurt

125 ml (½ cup) milk of your choice (unsweetened)

2,5 ml (½ tsp) vanilla extract

2,5 ml (½ tsp) honey or maple syrup (optional)

fresh fruit to serve

¼ tsp (1 scoop/ 0,6 g) Powr Nutrients Freeze-dried + Blended Daikon Radish Seeds per person

Method

1. Place chia seeds, yoghurt, milk, vanilla and honey or maple syrup in a bowl. Mix until well combined. Make sure the chia seeds aren’t stuck to the bottom of the bowl or haven’t formed any clumps. Cover with a lid and refrigerate overnight, or at least 2 hours.

2. Stir through the chia mixture to make sure no clumps have formed. Spoon into serving glasses. Top with fresh fruit and sprinkle with daikon radish seeds. Enjoy immediately.
